* 300 grams pork, cut into well pieces
* 50 grams salted fish
* 2 tablespoons sliced young ginger
* 2 tablespoons sliced red chilli peppers
* 2 scallions, cut 1" long
* 8-12 garlic cloves, peel off skin
* 5-8 chillies, chopped
* 2 tablespoons oyster sauce
* 1 teaspoon black soy sauce
* 1/2 teaspoon ground pepper
* 1/2 teaspoon sugar
* 1/4 cup water
* cooking oil
1. Mix the pork with oyster sauce, black soy sauce, ground pepper, sugar and water. Stir until mix well and let marinate for at least 30 minutes.
2. Heat oil in a wok over medium heat. Add salted fish and fry until golden, fragrant and cooked. Remove from heat. Then chop it into small pieces.
3. Transfer the marinated pork (prepared in step 1) in a heat-proof plate which is able to put in a steamer. Pour the chopped salted fish (prepared in step 2) on top of the pork. Also add sliced young ginger, chopped chillies, garlic cloves and chopped scallions. Then put in the steamer until cooked.
4. Transfer to a serving plate. Garnish on top with sliced red chili peppers. Serve immediately with hot steamed rice.
