* 300 grams sour pork
* 2 tablespoons sliced red shallot
* 1 tablespoon chopped chilli
* 2 tablespoons sliced young ginger
* 2 tablespoons roasted cashew nut
* 2 scallions, cut 1" long
* 2 tablespoons lime juice
* 2 tablespoons fish sauce
* 2 teaspoons sugar
* coriander leaves for garnishing
1. Slice the sour pork into well pieces and blanch in boling water. Drain and set aside.
2. Prepare the salad sauce by mixing lime juice, fish sauce and sugar. Stir until the sugar dissolved well. Then add chopped chilies, sliced young ginger, sliced red shallots and sliced scallions. Stir until all ingredients mixed well.
3. In a big bowl, mix cooked sour pork (prepared in step 1) and roasted cashew nuts with the salad sauce (prepared in step 2). Stir until all mixed thoroughly.
4. Transfer to a serving dish. Garnish on top with coriander leaves. Serve immediately with hot steamed rice.
